Cabbage Summer Squash Fritatta

Ingredients

    4 large eggs
    1/4 cup egg beaters
    1/2 cup 1% dry cottage cheese
    1/4 cup 2% shredded mozzarella cheese


    6 cups shredded cabbage
    1/2 cup chopped onion
    1 cup chopped yellow squash

    1 tsp salt
    1 tsp pepper
    1 tsp caraway seeds

Tips

Left overs make a quick breakfast or lunch.


Directions

Cook vegetables in non stick fry pan until soft. Cool.
Mix all ingredients well.
Place in large non stick fry pan.
Cook on medium high 5 minutes.

Place in 325 degree oven.
Bake 15 minutes until set & starting to brown on top.
