Spicy Chicken Chili

Introduction

This is a mix of two recipes that I have in the "Healthy Calendar Diabetic Cooking" book. It's a lighter version of a spicy white chicken chili. Hope you enjoy as much as we do! Number of Servings: 6

Ingredients

    1 lb - boneless, skinless chicken breasts, cut into 1-inch cubes
    1 medium onion, diced
    1 medium red pepper, diced
    1 medium green pepper, diced
    1 15 ounce can Great Northern Beans, rinsed & drained
    1 16 ounce can red kidney beans, rinsed & drained
    1 15 ounce can no-salt-added diced tomatoes
    1/2 14.5 ounce can fat-free, reduced sodium chicken broth
    1 4 oz can chopped or diced green chilies
    1/4 tsp black pepper
    1/2 tsp salt
    1 tbsp chili powder
    1 tsp cumin
    1/4 tsp cayenne pepper

Tips

You can always adjust the spices according to your taste. Add more to increase the heat or add less to decrease heat. You can always add all the green pepper and red pepper to up your vegetable intake as well.


Directions

Coat a large soup pot with cooking spray. Add chicken and cook over medium-high heat until lightly brown. Remove chicken from pan and set aside.

Spray pan again with cooking spray. Saute onion and peppers for about 4 minutes or until onion turns clear.

Add remaining ingredients and chicken and stir. Bring to a boil and reduced heat and simmer for 15 minutes.

Serving Size: makes 6 - 1 cup servings
