Chicken Tamale Pie

Ingredients

    1/3 c low fat milk
    1 large egg (or 1/4 c egg sub)
    1 1/2 tbsp taco seasoning (divided)
    1/4 tsp cayenne pepper
    1 (14 3/4 oz) can creamed style corn
    1 (8.5 oz) box corn muffin mix (I use Jiffy)
    1 (4 oz) can green chiles, drained
    1 (10 oz) can red enchilada sauce
    2 cups shredded cooked chicken meat
    3/4 c shredded white cheese
    crumbled Cotija or white cheese and cilantro to taste

Directions

1. Preheat oven to 400.

2. Combine the first 7 ingredients (milk through green chiles) using just 1/2 tbsp of the taco seasoning, in a large bowl, stirring until just moist. Pour mixture into round pie plate coated with cooking spray.

3. Bake at 400 for 20-30 min. While corn is baking, toss chicken in the remaining 1tbsp taco seasoning. When corn is done--it will be just barely browned--pierce entire surface liberally with a fork. Pour enchilada sauce over top. Top with chicken; sprinkle with cheese. Bake at 400 for 15 minutes to heat throw and allow cheese to melt. Remove from oven, let stand 5 minutes. Top with crumbling cheese and cilantro.

Serving Size: Makes 5 healthy portions (or 8 small portions)
