Veggie 'Meatballs'

Introduction

Best veggie meatballs I have ever had. This is a recipe my sister came up with about 30 yrs ago, I love that it is soy free. Best veggie meatballs I have ever had. This is a recipe my sister came up with about 30 yrs ago, I love that it is soy free.
Number of Servings: 6

Ingredients

    4 lg. eggs lightly beaten
    1/4 c. grated cheddar cheese
    1/2 c. onion, finely chopped
    1/2 c. pecans, finely chopped
    2 c. italian bread crumbs
    3 T vegetable oil

Tips

These freeze well, I freeze them by placing on a cookie sheet till frozen then toss in a freezer bag and return to freezer.


Directions

Saute onion in a small amount of oil.

Mix bread crumbs, cheese, onions, pecans. Add eggs, then roll into 1" balls.

Remove from skillet and place on papper towels to absorb any excess oil.

Best served by covering meatballs with your preferred sauce and bake at 350 for 30 min.

Serving Size: makes 24 1" balls
