2 cups whole wheat flour or whole wheat pastry flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups cooked, mashed yams
1/2 cup water
1/2 cup raisins
vegetable-oil spray, for muffin pan
Try using a trigger-style ice cream scoop to fill the muffin cups -- works great!
2. In a large bowl combine whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Add yams, the water, and raisins; stir until just mixed.
3. Lightly coat a muffin pan with vegetable-oil spray. Fill cups to the top. Bake for 25 to 30 minutes, or until the top of a muffin bounces back when pressed lightly. Let stand for 1 to 2 minutes before removing from the pan. When cool, store in an airtight container in the refrigerator.
