Creamy Crimini Mushroom Soup

Introduction

This filling soup is made with Crimini mushrooms but can be made with White Button mushrooms too. This filling soup is made with Crimini mushrooms but can be made with White Button mushrooms too.
Number of Servings: 4

Ingredients

    1 Pound fresh mushrooms, equals about 3 cups sliced.
    1 small onion chopped
    4 cloves of garlic, minced
    1 3/4 cup beef broth/stock
    1 cup 2% milk
    1/2 cup half & half cream
    1/2 cup grated parmesan
    1 Table spoon corn starch
    Salt and pepper to taste

Tips

Serve with sour dough bread. (optional)

Directions

Saute sliced mushrooms in a non-stick skillet without oil or butter and then set them aside. Add butter to hot skillet then saute onions when butter is melted and bubbling, stirring occasionally until onions are slightly clear. Add minced garlic to onions and cook for about 2 minuets.
Transfer onions, garlic and mushrooms over to a stock pot or soup pot then add beef broth, milk and half & half. Let soup come to a simmer and cook for 10 minuets. Add salt and pepper to taste.
Blend 2/3 of the soup in a blender or food processor until slightly smooth. Be careful not to let steam build up while blending soup.
Return to pot and add grated parmesan cheese. Allow soup to return to a simmer and mix a little water to corn starch and add to soup. Stirring until soup has thickened.
