Healthy Pumpkin Pancakes

Ingredients

    1 cup all purpose floour
    1 cup quick cooking oats
    2 tsp. sugar
    2 tsp baking powder
    1/2 tsp. salt
    1 pinch ground cinnamon
    1 cup skim milk
    1 egg, lightly beaten
    3/4 cup canned pumpkin
    2 tbl., vegetable oil
    1/4 walnuts (optional)

Directions

1. Combine flour, oats, sugar, baking powder, walnuts, salt and cinnamon.
2. Combine milk, egg, pumpkin and oil separately; stir into dry ingredients.
Pour batter by 1/4 cupfuls onto a hot greased griddle; turn when bubbles from on top of pancakes.
Cook until second side is goden brown.

Serving Size: 10-12 4" pancakes
