Migas - Jason and Gina style

Introduction

Number of Servings: 8

Ingredients

    6 eggs
    1/4 cup of heavy whipping cream
    3 T butter
    4 corn tortillas
    1/2 onion diced (1/2 cup)
    1 serrano pepper, diced
    1/2 cup mushrooms or potatoes
    2 cloves of garlic, minced
    1/2 cup of shredded cheddar cheese
    1/2 cup cilantro
    salt and pepper to taste

Directions

1. In bowl, whisk together with milk. Add a dash of salt and pepper.

2. Bake or fry tortilla strips.

3. Melt butter in a pan. If using potatoes, cook until done then remove them and add onions, peppers, garlic and mushrooms to the pan, and cook for a couple of minutes. Add the cooked potatoes back in.

4. Add egg mixture and tortilla strips to the skillet and let eggs sit for about one minute or until set on the bottom and then gently stir.

5. Sprinkle cheese and cilantro on top of eggs and continue to cook until melted.
