Number of Servings: 6

Ingredients

    1 C dried lentils (orange) rinse and drain
    3 C chicken broth - low sodium / water
    1 19 oz can chopped tomatoes - low sodium
    1 C peeled / unpeeled chopped/cubed potatoes
    1/2 C chopped carrot
    1/2 C sliced celery
    1/2 C chopped onion
    2 Tbsp parsley - chopped
    1 tsp dried basil / freeze dried herbs
    1 clove garlic or to taste - chopped


Tips

Quanitites can vary to taste - modify calories accordingly - water / vegetable broth makes a vegetarian dish. (with water reduce 30 calories in totals)



Directions

Put all ingredients in a saucepan - bring to boil, reduce heat and simmer 45 minutes

I have frozen this recipe in individual servings for a quick meal at a later time.
