-
1 whole chicken
1 large onion, chopped
3 large carrots, chopped
1.5 cup of green beans, chopped
1.5 Egg Noodles
salt to taste
pepper to taste
Tips
The old wives tale about chicken soup curing colds is because of chicken fat. Without chicken fat, and all the antibiotics in the fat, the soup will not help one's cold. For a healthier version of this recipe use only breast meat and skim all the fat from the chicken broth. Also increase the amount of vegetables and adding different types, like celery, to make this a diet friendly dish.
Directions
Chop onions, carrots and green beans. Add onions, carrots, green beans and chicken back into the pot. Let simmer until the vegetables are soft. Season as desired.
Serving Size: makes 10, 2 cup servings
