4 cups mushrooms finely chopped
1 medium onion finely chopped
4 10 ounce packages frozen chopped spinach drained
1 cup Egg Beaters
2 large eggs
salt & pepper to taste
Transfer to mixing bowl.
Saute well drained spinach until starting to dry out.
Transfer to bowl and cool.
Add Egg Beaters, eggs, salt & pepper.
Spray fry pan with Pam and heat over medium heat.
Add egg mixture and cook on medium for 5 minutes.
Sprinkle with Parmesan cheese.
Bake in 350 degree oven until set.
