Pumpkin, canned, without salt- 1/2 can Coconut Milk- 3.5 oz Cinnamon, ground, .5 tsp Nutmeg, ground, .5 tsp Egg, fresh, about 3/4 on large Maple Syrup, 1 tbsp
Preheat oven to 425. Beat egg in a bowl, then add other ingredients, mixing well. Place ramekins in a lasagna pan and fill with 1/2-1 inch boiling water. Bake at 425 for 10 minutes, then lower heat to 350 and bake for 20 more minutes. Turn off oven and let solidify for about ten more minutes. Serve warm or cold, with whipped cream, berries, or dark chocolate.
