2 Step Beef Stew

I prepare this in two steps.1. cube meat slow roast with garlic, onion and spices till tender. Cool, freeze in 4oz serving sizes in zip lock bag.
2. Defrost # of servings required and add serving size quantities of vegetables, along with broth in deep pot/electric pan. Thicken with flour for a light gravy. When vegetables are done, serve.

Ingredients

8 oz Pre Cooked Cubed beef
2 Cloves Garlic
1/2 Cup diced onion
1 Tbsp Olive/vegetable oil
2 Cups low sodium beef broth/consumme
2 Tbsp flour
2 Medium Potatoes - pealed & cubed
1 Large carrot pealed and siiced
1 Parsnip - pealed and cubed
1/2 Cup diced turnip
1 Cup frozen peas
1 Bayleaf
1 Tbsp low sodium soya sauce
Season pepper to taste.
Tips
As a single serving, I have made this without flour, use just enough broth to cook desired vegetables in microwave until just tender then added beef, cook another 3-5 minutes until hot. Ready to serve, with a salad.
Directions
Step 1 - cube 1 lb of beef round steak or chuck = remove excess fat. Place in roasting pan with 1 small onion diced, garlic cloves and other spices, 1 tbsp worstshire sauce - cover and slow roast until tender. Cool and place into 'serving size (4 oz)' zip-lock bags and freeze.
Step 2 - Preparation for serving. Remove 4 servings of precooked beef from freezer, In deep pot/electric fry pan saute in 1 Tbsp oil, diced small onion, garlic clove, till soft, mix 2 Cup beef broth with 2 Tbsp flour add to pan, with bayleaf and season pepper.
Peal and cube vegetables - potatoes, carrots, turnip, parsnip after 10 minutes add precooked beef , and 1 Cup frozen peas, let simmer for another 10-15 minutes, or until vegetables are tender...add more broth to maintain a sauce.
Serving Size: Quanity makes 5 Servings 3 oz meat with 1 Cup vegetables
