Boil eggs. Take the Tofu and vinegar and blend together with hand mixer. Remove shells from eggs. Remove yolks from eggs. Mix Tofu mixture,yolks, and Dijon mustard together until consistent mixture. Spoon the mixture into each egg half. Top each egg with a slice of baby Gerkin pickle.
