Introduction

I haven't had pancakes since my diabetes dx. These are heavenly served with fresh berries and whipped cream! I haven't had pancakes since my diabetes dx. These are heavenly served with fresh berries and whipped cream!
Number of Servings: 6

Ingredients

    3 fresh eggs
    1/2 cp full fat coconut milk
    2 TBL coconut oil, melted and cooled
    2 - 3 tsp stevia in the raw or other low cal sweetener
    1/2 tsp vanilla extract
    1/2 tsp sea salt
    3 TBL coconut flour
    1 tsp baking powder

Directions

Melt coconut oil and cool. Whip eggs, coconut milk, salt and sweetener. Whip in coconut flour and baking powder. Let rest for 5-10 minutes to allow the mix to thicken, stir again. If needed, thin with water to desired consistancy. Heat griddle, then slowly pour onto hot griddle. Pouring too fast will cause batter to spread too thin.

* To make flatbread, omit sweeteners and vanilla and increase sea salt to 1 tsp.


Serving Size: Makes 6 - 5 inch pancakes
