Ingredients

250 Grams Eggplant
6 Garlic Clove
1.5 Tbs. Tahini
1/8 Cup Lemon Juice
1/2 Tsp Cumin
1/4 Tsp Salt
1 Tbsp Olive Oil
Tips
Best if you refrigerate for at least 3 hours before serving.
Directions
Cut slits in the eggplant and insert garlic cloves. Char on a gas flame, bbq or bake at 400 degrees until tender.
Plunge eggplant into an icewater bath. Peel skin off.
Place eggplant meat, garlic, tahini, lemon juice, in an electric blender (use lowest setting) or use a stick-blender and blend well. Transfer mixture to a mixing bowl, and slowly mix in olive oil, cumin, and salt.
Makes about 10 1/4 cup servings. Serve with a cut veggie tray and or Pita bread/chips
