250 Grams Eggplant
6 Garlic Clove
1.5 Tbs. Tahini
1/8 Cup Lemon Juice
1/2 Tsp Cumin
1/4 Tsp Salt
1 Tbsp Olive Oil
Best if you refrigerate for at least 3 hours before serving.
Plunge eggplant into an icewater bath. Peel skin off.
Place eggplant meat, garlic, tahini, lemon juice, in an electric blender (use lowest setting) or use a stick-blender and blend well. Transfer mixture to a mixing bowl, and slowly mix in olive oil, cumin, and salt.
Makes about 10 1/4 cup servings. Serve with a cut veggie tray and or Pita bread/chips
