Introduction

low fat stuffed peppers low fat stuffed peppers
Number of Servings: 5

Ingredients

    5 large green peppers
    1 lb. of ground london broil
    1/2 cup of black beans
    1/2 cup of barley
    1 cup of cooked brown rice
    2 cloves of chopped garlic
    2 tsp of Worcestershire sauce
    3 cans of Hunt's diced tomatoes
    2 ounces of reduced fat mozzarella cheese

Directions

ground london broil
mix together
ground beef, barley,black beans, brown rice, garlic, worcestershire, 1 can of diced tomatoes.

cut off the tops of the green peppers and stuff with the mix.

top each pepper with a little cheese

put into a deep corning wear dutch oven

add 2 cans of diced tomatoes and 1 can of water

bake on 350 2 hours


Serving Size: makes 5 large stuffed peppers
