I tbsp olive oil
700g red ripe tomatoes, cut in quarters (skins on)
I medium size onion chopped small
I medium sized potato chopped small
2 cloves garlic, crushed
275 ml vegetable stock
2 tbsp chopped fresh basil (or 1tsp dried - add with tomatoes)
freshly milled black pepper
Lovely with crusty bread or even cheese on toast.
Add onion and potatoes and soften without browning (10 mins)
Add tomatoes, stir well and cook for 1 min
Pour stock in, season and add garlic
Cover and simmer for 25 mins
Either sieve or blend
Taste to check seasoning, add basil then reheat and serve.
