Introduction

This soup reminds me of Olive Garden's Zuppa Toscana, made lighter with ground turkey and fat free cream cheese but every bit as rich and delicious. This soup reminds me of Olive Garden's Zuppa Toscana, made lighter with ground turkey and fat free cream cheese but every bit as rich and delicious.

Ingredients

    1 lb. carrots, sliced
    3 lbs red potatoes, diced
    1 medium yellow onion, diced
    4 oz spinach, diced
    8 oz mushrooms, sliced
    1 lb. ground Jennie-O mild turkey breakfast sausage
    1 pkg. (8 oz.) fat free cream cheese
    1 tbsp. reduced sodium Better Than Bouillon chicken base
    8 cups water, divided
    2 tbsp. garlic, minced
    1 tbsp. extra virgin olive oil
    1 tsp. ground thyme
    1 tbsp. Italian seasoning
    fresh ground pepper, to taste

Directions

Combine olive oil, garlic, Italian seasoning and black pepper in a 5 qt. pot over medium heat. Add mushrooms and onion and sautee until onions begin to appear translucent.

Add ground turkey and continue cooking until turkey is almost cooked.

Add 6 cups water, 1 tbsp Better than Bouillon, carrots, and spinach.

Bring to a light boil, then add cream cheese. Once cream cheese is melted, add potatoes, remaining 2 cups of water and 1tsp of ground thyme.

Simmer over low heat until potatoes are cooked, approximately 30-45 minutes.

Serving Size: Makes 16 1-cup servings
