Wheat Berry Chili

Number of Servings: 16

Ingredients

    3 cups wheat berries
    3 cups water (maybe a little more)
    28 oz diced tomatoes
    1/2 cup ketchup
    1 tbsp chili powder
    1 cup grated carrots
    32 oz kidney beans
    4 cups tomato juice
    2 cups grated celery
    1/4 cup brown sugar
    2 tbsp minced onion
    1 cup grated zucchini
    sea salt and pepper to taste
    1 pound hamburger (optional)
    **calories calculated without beef***

Directions

Bring water to boil. Add wheat berries and cook covered on low until soft (about 20 minutes depending on type of wheat used). Meanwhile, grate vegetables. Combine all ingredients, cover and simmer for 45 minutes, stiring occasionally. Add salt and pepper to taste.
