Asian Chicken Salad
Introduction

Ingredients
- 2 cups cooked chicken, skin removed, cut into bite-sized pieces
- 4 cups cabbage, shredded
- 1 cup mushrooms, sliced
- 1 cup carrots, grated
- 2 tablespoons cilantro, chopped
- 1 cucumber, thinly sliced
- 3 green onions, thinly sliced
- 1 mandarin orange or tangerine, divided into sections
- 1/2 cup nonfat Asian or Oriental-style salad dressing
- black pepper
Tips
Directions
1. In a large bowl, combine chicken, cabbage, mushrooms, carrots, cilantro, cucumber, and dressing. Toss well.
2. Top with green onions and tangerine sections. Pepper to taste.
Serves 4.

I left out the cucumbers because I did not have any and made my own Asian style vinaigrette because I am allergic to soy in all the premade products and it was still very delicious. I would love a recipe for Asian salad dressing that does not have soy that is of the same flavor as the one used here - 3/10/10

I changed this recipe just a bit. I used twice as much cilantro (because I am IN LOVE with cilantro and can't get enough of it) and I doubled the green onions and put them straight into the salad in addition to sprinkling some on top. You could also add nuts to this and it would be even better. - 5/2/10
