Introduction

This healthy, hearty salad is packed full of fruit AND vegetables. This healthy, hearty salad is packed full of fruit AND vegetables.
Number of Servings: 1

Ingredients

    • 2 cups cooked chicken, skin removed, cut into bite-sized pieces

    • 4 cups cabbage, shredded

    • 1 cup mushrooms, sliced

    • 1 cup carrots, grated

    • 2 tablespoons cilantro, chopped

    • 1 cucumber, thinly sliced

    • 3 green onions, thinly sliced

    • 1 mandarin orange or tangerine, divided into sections

    • 1/2 cup nonfat Asian or Oriental-style salad dressing

    • black pepper

Tips

We love to toss the salad with cooked (and cooled) rice noodles snipped into bite-size pieces.


Directions

1. In a large bowl, combine chicken, cabbage, mushrooms, carrots, cilantro, cucumber, and dressing. Toss well.



2. Top with green onions and tangerine sections. Pepper to taste.



Serves 4.

    I did not make any changes to this recipe. Hubby and I thought it was great! Quick and easy and very filling. I used the packaged grilled chicken stips, which made it very quick to make. You get a whole days worth of veggies in a tastey salad! - 12/30/08

    It's simple to puchase coleslaw (shredded cabbage and carrots) and sub that, which I do all the time. Wishbone makes the spray Asian nonfat dressing, and I usually omit the cilantro and cucumber. I like the crunch of the cabbage in this recipe and have it at least once a week! - 12/27/07

    I would call this "Asian Chicken Coleslaw" as it is very cabbage-heavy like a slaw is. I don't like coleslaw but love this recipe. This is something I would share at a picnic. Could not find lowfat Asian dressing so I used "Kraft Creamy Poppyseed" dressing instead-not as healthy but yum! - 11/7/08

    Loved Loved Loved It! For the Asian Dressing, I used Thai Peanut Sauce, I mixed in some soy sauce, a couple of drops of sesame oil and 2 packets of Truvia or stevia...this made it a little more sweet without adding any calories. Delicious! - 7/12/09

    Delicious! Takes time to make, as you have to shred so many vegetables, but well worth the effort! And the portion is nice and large, it works as lunch. Packs well for the next day, as the flavors have time to meld. Yummy! - 8/1/07

    This was a FANTASTIC summer salad! I spinkled in some red pepper flakes instead of black pepper, and topped it off with a bit of sunflower seeds. I also used a gluten free dressing, so my DH is now able to enjoy! Thanks for such a GREAT recipe! :) - 9/1/08

    the calorie count depend on your ability to find the fat free dressing, I could only find "light" dressing and that added to the count. The cabbage flavor dominates the flavor of everything else in the salad including the dressing. Better to have chicken and slaw. - 7/5/07

    I left out the cucumbers because I did not have any and made my own Asian style vinaigrette because I am allergic to soy in all the premade products and it was still very delicious. I would love a recipe for Asian salad dressing that does not have soy that is of the same flavor as the one used here - 3/10/10

    Too much cabbage, I'll probably swap half out with bok choy, napa, or even iceberg. It's also a bit on the bland side for my taste. May try again with a home-made lo-fat dressing with wasabi, red chili peppers and ginger to boost the flavor. Also would be good with a few almonds on top. - 7/30/07

    I changed this recipe just a bit. I used twice as much cilantro (because I am IN LOVE with cilantro and can't get enough of it) and I doubled the green onions and put them straight into the salad in addition to sprinkling some on top. You could also add nuts to this and it would be even better. - 5/2/10

  • The servings size is a little misleading. In the nutrient label and the top of the recipe it lists the serving size as 1 (which leads me to believe that the recipe serves 1 person). However, at the bottom of the article, it states that the recipe serves 4. - 1/9/14
