IntroductionA simple filling meal. A simple filling meal.
1 lb of lean Chicken meat
1 cup rice
250 g Mushrooms (baby bella or similar)
1 Tbsp Oil
1 Chicken bouillon (from a cube)
Make sure there is some liquid when you add the rice to the baking tray, so it doesn't dry too much.
In the mean time, saute the onions and add the rice. Stir for 1-2 minutes and add the bouillon water from the chicken.
Boil until the rice is fully cooked (add more water if necessary). Season the rice with salt and pepper and move it to a baking tray.
Layer the chicken on top and sprinkle with paprika.
In the same pan, add the oil and the sliced mushrooms and season with salt and savory. Once cooked, layer them over the chicken.
Put the tray in a preheated to 475F oven and bake for 5-10 min.
