2 cups chopped summer squash
1 medium baby zucchini, chopped
1 cup chopped green peppers (bell)
1 cup chopped sweet red peppers
1 cup chopped yellow peppers
1 cup chopped tomatoes
6 tbsp balsamic vinaigrette salad dressing
you could also add chunks of cheese or pepperoni
remove the seeds from the summer squash
chop all the vegetables and place in a large bowl
add the balsamic vinaigrette salad dressing and toss together.
can be served chilled or at room temperature.
