Millet Pancakes

Introduction

i have this allergy to wheat, so am trying to reduce the amount of wheat used in my favorite recipes, pancakes are one of the ;)
i used half millet flour and the other half regular all purpose flour for a beginning.. not bad at all!

Number of Servings: 5

Ingredients

    Flour, white, 0.25 cup
    Millet, 0.25 cup
    Granulated Sugar, 2 tsp
    Baking Powder, 1 tsp
    Egg, fresh, 1 small
    *Low fat milk - Kdcow, 4 oz
    Salt, 0.125 tsp
    *Canola Oil, 1 tbsp

Tips

top with honey and fresh fruits, instead of maple syrup.


Directions

- in a bowl, mix the dry ingredients (flours, sugar, salt, backing powder)
- in another bowl mix the remaining ones (milk,egg, oil)
- pour wet ingredients on dry ones and mix.
- heat a cast iron pan, brush it with little oil, and pour the batter making 5 medium pancakes.
- cook each side for 2 - 3 minutes.

Serving Size: makes 5 servings
