Tomato Coconut Bisque 2 cups

Introduction

This is a simple, healthy soup for those cold winter nights. you can even keep it vegan by not adding the yogurt. This is a simple, healthy soup for those cold winter nights. you can even keep it vegan by not adding the yogurt.
Number of Servings: 2

Ingredients

    1 3/4 cup Low sodium Tomato/vegetable juice
    1/2 cup Low fat coconut milk
    approx. 2 Tbsp. Cornstarch and enough water to make a thin slurry
    Black pepper ginger and cinnamon to taste
    2 Tsp. non-fat greek yogurt
    1 Heirloom cherry tomato halved(or whatever cherry tomato you can get)

Tips

Works great in bread bowls too.


Directions

Bring Vegetable juice to a simmer. Make a thin slurry out of the cornstarch and cold water. Add some of the slurry to the juice and bring to a boil. watch for the mixture to be thick and creamy. If not thick enough continue adding slurry until the soup is very viscous and creamy like a thick gravy. Be certain to bring it to a boil between additions of the slurry. Add spices to taste then simmer 5-10 mins. Add the coconut milk, adjust spices if needed and gently stir. Plate, top with a dollop of nonfat greek yogurt then the halved tomato and serve.
