Ingredients

2 1/2 cup Low sodium Tomato/vegetable juice
1/3 cup Low fat coconut milk
approx. 2 Tbsp. Cornstarch and enough water to make a thin slurry
Black pepper to taste
1 Tbsp. non-fat greek yogurt
Tips
Works great in bread bowls too.
Directions
Bring Vegetable juice to a simmer. Make a thin slurry out of the cornstarch and cold water. Add some of the slurry to the juice and bring to a boil. watch for the mixture to be thick and creamy. If not thick enough continue adding slurry until the soup is very thick and creamy like a gravy. Be certain to bring it to a boil between additions of the slurry. Add black pepper to taste then simmer 5-10 mins. Add the coconut milk and gently stir. Top with a dollop of nonfat greek yogurt and serve.
