Number of Servings: 4

Ingredients

    12 oz. Pork loin or shoulder
    1 large onion, diced large
    2 cloves garlic
    2 tsp. cooking oil
    2.5 cups water
    14.5 oz can diced tomatoes
    2 medium carrots, cut into 1/2 slices
    2 parsnips, cut into 1/2 slices
    2 stalks celery, sliced thin
    3/4 cup lentils, rinsed and drained
    1.5 tsp rosemary (dried)
    1 tsp beef broth powder
    salt & pepper to taste

Directions

Trim fat from pork. Cut into 3/4-inch cubes. In a large skillet brown pork in cooking oil. Remove from pan and add to crock pot. saute onion and garlic in skillet. Add 2.5 cups water to deglaze and add mixture to pork.
To crock pot, add tomatoes, carrots, parsnips, celery, lentils, rosemary, beef broth powder, salt & pepper.
Mix well, cover and cook on low-heat setting for 10 - 12 hrs. or on high-heat setting for 4 - 5 hrs.
