Baked Oatmeal Casserole

Introduction

Number of Servings: 6

Ingredients

    2 cups organic old fashioned rolled oats (whole grain)
    1 teaspoon baking powder
    4 teaspoons cinnamon
    1/2 teaspoon salt
    21 almonds
    1 cup sliced strawberries (any berry works)
    2 cups unsweetened Almond Breeze
    1 large egg
    1 tablespoon vanilla
    1 ripe banana, peeled, cut into 1/2" slices
    3 tablespoons stevia

Tips


Directions

Preheat oven to 375 and grease 9x9 baking dish.

In large bowl, mix the oats, stevia, baking powder, half of the cinnamon, salt, almonds, and strawberries. In another bowl whisk together the almond milk, egg, and vanilla.

Add the oat mixture to the baking dish. Arrange the bananas on top and pour the liquid mixture over everything. Gently shake the baking dish to help the liquid go through the oats. Spring with remaining cinnamon.

Bake 35-40 minutes or until nicely golden brown and the milk mixture has set.

Serving Size: Makes six pieces
