Turkey and Yam Hash

Ingredients

2 C Yams, diced
1 lb lean ground turkey
3 C broccoli, chopped
1 C onion, chopped
2 medium bell peppers, chopped
2 cloves garlic, minced
1 Tbsp sunflower oil
Salt & Pepper to taste
Tips
Directions
1. Bring a large pot of water to a boil. Add sweet potatoes, and cook for about 5 minutes, or until tender. Drain, and set aside.
2. While the sweet potatoes are boiling, heat 1 tsp oil in a large skillet over medium-high heat. Saute the onion, garlic, and turkey until cooked through. Season with salt & pepper, to taste.
3. Add chopped broccoli and bell pepper and saute until desired texture/crispness.
4. In a large bowl, toss together the sweet potatoes, and turkey mixture.
5. Heat remaining oil in a large skillet over medium heat. Place the sweet potato mixture in the skillet, flatten with a large spoon or spatula, and cook until the bottom is crisp. Carefully turn and cook the other side until crisp. Serve warm.
