Ingredients

1 medium onion, chopped
1 tbsp olive oil
2 cloves garlic, minced
4 boneless,skinless chicken breast halves (4 oz each) chopped and cooked
2 14 oz cans chicken broth
1 4 oz can chopped green chilies
2 tsp ground cumin
2 tsp dried oregano
1-1/2 tsp cayenne pepper
3 14.5 oz cans great northern beans, drained, divided
1 cup (4 oz shredded monterey jack cheese optional
optional chopped jalapeno pepper
Tips
Directions
In a large saucepan over medium heat, cook onion in oil for 10 minutes or until tender, add garlic and cook 1 minute longer. add the chicken, broth, chilies, cumin, oregano and cayenne pepper and bring to a boil. Reduce heat to low. Mash one can of beans until smooth with with potato masher. add to saucepan. add remaining beans to saucepan. simmer for 20-30 minutes. top each serving with cheese and jalapeno pepper if desired.
