Number of Servings: 12

Ingredients

    1 cup fresh or frozen corn kernels
    1 cup diced zucchini
    1 cup diced red or green bell pepper
    1 cup frozen peas
    1 cup green beans, cut into 1/4 inch pieces
    12 cups torn or shredded lettuce (use combination of romaine, leafy green, iceberg, etc.)
    1 recipe Fresh Salsa
    1 recipe Sweep Pea Guacamole

Directions

Steam corn, zucchini, pepper, peas, and beans for 5 minutes over boiling water. Remove from the heat, place in a bowl, stir in 1/3 cup of the salsa and set aside. To serve, place a mound of lettuce on each plate, spoon the vegetable mixture over the lettuce, top with the guacamole and drizzle with the remaining salsa.
