Broccoli Mushroom Alfredo with Shirataki Tofu Noodles

Introduction

I love ALfredo, however I stay away from it because of the fat and calories. Well not anymore. I cooked up this version one night while experimenting wit House Foods Shirataki Tofu Noodles. Ingredients

    1 8 oz. pkg shirataki tofu noodles fettucine shape
    2 cups broccoli and mushrooms chopped
    3/4 cup onion chopped
    3/4 cup 1% milk
    2 oz neufchatel cream cheese
    2 tbp reduced fat parmesan style grated topping
    2 tsp reduced fat sour cream
    1/4 cup fage non fat greek yogurt
    1/4 tsp. ground nutmeg and black pepper
    1/8 tsp. morton lite salt

Tips

You could lowr the fat content by using fat free cheese, sour cream and milk.


Directions

Spray a 12 inch nonstick skillet with cooking spray. Saute broccol,i mushrroms and onions until mushrooms are brown. Set aside. In same skillet add cream cheese and 1/4cup f milk and stir. As cream cheese melts into the milk and remaining ingredients are rest of milk. Should be a smooth consistency.
Drain and rinse noodles, then add to skillet along with vegetables. Toss to combine.

This makes 2 huge portions for dinnr or 4 "lunch" sized portions.
