Introduction

A very hearty slow cooker pasta sauce with no meat (unless you add it) A very hearty slow cooker pasta sauce with no meat (unless you add it)
Number of Servings: 24

Ingredients

    4 large cans of canned tomatoes (18 c)
    1 can tomato sauce
    1 can tomato paste (o.5 cup)
    1 zucchinni, unpeeled, chopped
    1 green bell pepper chopped
    1 medium onion, chopped
    4 medium mushrooms
    3 garlic cloves
    1/4 c chopped oragano
    other spices to taste

Tips

I use a combination of diced tomatoes, diced in puree and whole peeled tomatoes. Fresh baked garlic is a plus.

Best to use low sodium tomatoes to reduce salt intake.


Directions

Add 1 tbsp of EVOO to sauce pan and add onion, garlic, green peppers to hot skillet. Sautee veggies till onions are just becoming transparent.

Place all other ingredients into a 6 quart slow cooker.

Cook for a minimum of 9 hours on low heat level until desired consistency is reached.
