Spicy chicken and red lentil soup

Introduction

This is a hearty but low fat meal for lunch or brunch; you can eat it with whole wheat pita bread too. This is a hearty but low fat meal for lunch or brunch; you can eat it with whole wheat pita bread too.
Number of Servings: 6

Ingredients

    3 cups Red lentils
    1 Chicken breast
    1 large onion, chopped
    1 habanero, chopped
    1 mixed vegetable packet
    6 cloves of garlic, minced
    2 tsp ground ginger
    1/4 cup olive oil
    6 tomatoes, diced

Tips

Red lentils cook faster than green ones, s keep an eye on it, use low heat.


Directions

Season chicken with salt and black pepper, brown chicken in hot oil, remove and cut into small pieces, add onion and garlic to oil and cook for 3 minutes, add all other vegetables and add chicken; sautee for 4 mnutes and add 4 cups of water and bring to boil. Put in letils and season with beef cubes and salt. Cook for another 15 minutes.
