Sweet Potato Dal

Ingredients

    2 cups sweet potato
    Small onion
    Garlic
    Red pepper flakes
    Turmeric
    Garam masala
    2 cups vegetable broth
    1 cup red lentils
    4 cups fresh spinach
    Salt & Pepper

Directions

Sauté onions and garlic, add red pepper flakes and other spices. Add broth and lentils to onions and bring to a boil. Add sweet potatoes and return to a boil. Let simmer until lentils are fully cooked, about 5 minutes more. Add additional broth if needed. Once lentils are cooked and potatoes are tender add spinach and cook until wilted. Serve with rice if desired.
