Skillet Balsamic Molasses Beef and Sweet Potatoes

Introduction

Easy skillet dinner, just add a side vegetable. Easy skillet dinner, just add a side vegetable.

Ingredients

    9 oz Bottom round roast, fat trimmed
    6 oz Sweet potato
    2 Tbsp Balsamic Vinegar
    3 Cloves Roasted Garlic
    2 Tbsp Molasses
    1/2 tsp Roasted Paprika
    1/2 tsp Splenda
    1/4 cup water
    Pinch Black Pepper

Directions

1) Trim fat from beef, cut into cubes about 1-2 inches, it is easiest if the amount ends up being divisible by 3.
2) Peel and cut up one sweet potato, likewise it is easiest if the pieces are a multiple of 3
3) Mix together vinegar, molasses, pepper, and splenda
4) Chop and roast garlic until slightly brown, add to vinegar/molasses
5) Roast paprika until it begins to darken, add to vinegar/molasses
6) Mix together well spices and vinegar/molasses. Add water
7) Add beef and vinegar/molasses to zipper bag and marinate at least one hour.
8) Add beef to cast iron skillet (or other frying pan that can be placed in the oven) Cook on range until warm. Cover and transfer to preheated 400 degree oven and cook 10 minutes or until beef reaches internal temperature of at least 145 degrees
