Introduction

Number of Servings: 6

Ingredients

    - 2 tbsp olive oil

    -2 small yellow onions

    -1-2 garlic cloves

    - 3 large carrots

    -1-2 celery stalks

    -green beans( halved)

    -1 eggplant

    -4 small zucchini/squash

    -2 bell peppers

    -1 can of whole tomatoes in juice

    -1/2 bouillon cube

    - herbs: basil, oregano, thyme, italian parsley

    - chicken/ turkey(opt)

Tips

* cut all the vegetables in chunks all about the same size


Directions

1. 2 tbsp olive oil in large pressure cooker
2. add garlic and onions and cook till onions are soft
3. add carrots
4. add celery
5. add green beans
6. add eggplant
7. add zucchini
8. add bell peppers( chicken)
9. add can of tomatoes then add cooked turkey
10. add spices and when the yellow pin goes up cook for 3 to 6 minutes then turn off heat
11. when pin goes down it is ready and add basil
