Red & Black Beaned Rice

Number of Servings: 12


    2 Cups Long Grain Brown Rice (uncooked)
    1 Cup Red Beans (dried, uncooked)
    1 Cup Black Beans (dried, uncooked)
    1 Can Fire Roasted Diced Tomatoes
    1 Can Chili Ready Diced Tomatoes
    1 Can sliced Stew Tomatoes
    3 Beef Boullion Cubes


Add onion powder, paprika, chili powder, and cayenne powder to give a hint of flavor and spice.


Cook the dried beans according to the instructions for "quick soak".

Approximately 40 mins before the beans are done, in a separate pot cook the brown rice. When you are bringing the water for the brown rice to a boil, throw in the beef boullion cubes.

After the beans have cooked, drain and rinse cooked beans. Return to pot, then add Fire Roasted Tomatoes, Chili Ready Tomatoes, and Stewed Tomatoes. Stir.

Add rice to beans, stir.

Serving Size: Makes Approximately Twelve 1/2 Cup Servings
