Beef & Cheese Skillet Casserole

Introduction

Ingredients

    2 cups rotini pasta-uncooked
    1 lb 97/3 ground beef organic
    1 onion - diced
    1 zucchini - diced
    1 green bell pepper - diced
    1-14.5 oz can crushed tomatoes
    1-8 oz can tomato sauce
    1 tblsp chili powder
    1/2 tsp cayenne pepper
    1 tsp garlic powder
    1 tsp sugar
    2/3 cup shredded, reduced-fat cheddar cheese

Directions

Cook pasta according to package directions, omitting salt. Drain.

In a large nonstick skillet, cook ground turkey until beginning to brown. Drain any excess fat and set aside in bowl. Add onion, pepper and zucchini and sautee until at desired softness then add turkey back to pan.

Add remaining ingredients except cheese and pasta and bring to a boil. Reduced heat and simmer for 6-7 minutes or until beginning to thicken. Fold in cheese and toss with pasta.

Serving Size: 4 1 1/2-cup servings
