Garlic shrimp & white beans (adapted from BonApetit)

Introduction

Original recipe calls for 6 Tbsp oil and just 1 Lb shrimp
(i do not eat shrimp so I exchanged 8oz for sea scallops
and 1 Tbsp oil was enough to saute in)

Number of Servings: 4

Ingredients

    1cup dry white beans (soaked overnight and cooked)
    3 garlic cloves , minced
    2 dried chile de arbol (spanish market)
    1 bay leaf
    1.25 cups chopped tomato
    1 Tbsp tomato paste
    1 cup Pomi chopped tomato
    1 cup chicken broth (no salt)
    8 oz peeled shrimp
    8 oz sea scallops
    1 tsp smoked paprika
    2 tbsp chopped fresh parsley
    salt and pepper (a dash)

Directions

soak and cook beans as per package.Set aside
Heat the oil in deep pan add 1 chopped garlic clove,the
bayleaf and dried chiles,cook for about 4 min until fragrant, stirring constantly,add chopped tomato,cook
andadd salt,pepper and stir tomato mixture intill tomatoes are totally broken down,add the tomato paste and cook ,stirring until tomatoes turn a brownish color
now add the pomi chopped tomato ,beans and
chicken broth.Bring to a brisk boil ,let cook until it has thickened a bit then you add the shrimp and scallop with the remaining chopped garlic and paprika,cook until seafood is done, sprinkle the chopped parsley over dish and serve ,with rustic bread perhaps.


Serving Size: serves 4 at 2oz each of shrimp and scallop and 1/2 cup beans + sauce
