Peanut Chicken

Introduction

Chicken stir fry in a creamy spicy & sweet sauce Chicken stir fry in a creamy spicy & sweet sauce
Number of Servings: 3

Ingredients

    2 Chicken Breasts cut into 1 inch cubes
    4 teaspoons soy sauce
    1 clove of garlic, minced
    2 tsp shredded ginger root
    1 Tbs Olive Oil
    1 medium red bell pepper, cut into 3/4" pieces
    1/2 cup picante sauce
    1 Tbs Reduced Fat Creamy Peanut Butter

Directions

Marinate chicken in soy, garlic and ginger for 10 minutes. Heat oil in stir fry pan over medium high heat. Add bell pepper and saute until fragrant. Remove pepper and add chicken. Saute until no longer pink. Meanwhile, mix picante sauce with peanut butter until mostly smooth. Add to chicken with bell pepper and heat until smooth and bubbly. Serve over rice.
Makes 2-3 servings
