Black Bean Vegan Burritos

Introduction

Hearty vegan burrito dish with a much flavor! Hearty vegan burrito dish with a much flavor!
Number of Servings: 4

Ingredients

    1 tablespoon extra virgin olive oil
    1 small onion, diced
    4 cloves garlic minced (2 teaspoons garlic from a jar)
    1-15 oz can of black beans, undrained
    1 tablespoon chili powder **
    1/2 teaspoon cumin **
    1 tablespoon hot sauce, or to taste **
    4 whole wheat tortilla
    2 cups (when cooked) brown rice
    Juice from 2 limes (4 tablespoons lime juice)
    2 tablespoons fresh cilantro, chopped (2 teaspoons dried)

    *** if you don't have or don't want to use those spices, you can substitute a 1/2 packet of taco or chili mix (I have used 1/2 of McCormicks 1.25 oz seasoning mix packets)

Tips

Add whatever toppings you like -- avocado, tomatoes, lettuce, guacamole, tofu sour cream, black olives, etc!


Directions

1. Sauté onions in pan with olive oil & garlic (if using fresh garlic).
2. While onions, garlic are cooking, cook rice as directed. When rice is finished cooking, toss with cilantro and lime juice so thoroughly mixed.
3. When onions are translucent, add undrained black beans, chili powder, cumin, hot sauce (or seasoning packet mix instead) -- and garlic from a jar if you are using that. Simmer over low heat, stirring frequently, until liquid has mostly evaporated.
4. Prepare tortilla in oven as directed.
5. Assemble tortillas, putting 1/4 bean mixture then 1/4 of rice on each tortilla.
6. Garnish tortilla as desired!

Serving Size: Makes 4 servings of 1 burrito each
