My "Tourlou" Recipe

Ingredients

    1 cup olive oil
    1 onion chopped
    3 gloves garlic chopped
    1tbsp Beef flavored soup base
    1/4 cup tomato puree
    2 medium eggplants cubed
    5 zucchini cubed
    5 medium potatoes cubed
    1/2 green bell pepper cubed
    1 cup fresh parsley chopped
    1 cup fresh dill weed chopped
    1 tbsp salt or as much as you like
    1 tsp pepper
    4 cups or more water
    1 carrot chopped

Directions

Cut in medium cubes the eggplants and let them stay for 15 minutes in water with some salt to let a little of the bitter taste go away. In the mean time sautee the oil with the onion and the garlic. Add the tomato puree, the the rest of the ingredients. Add the parsley and the dill the last 20 minutes to preserve the taste and nutrients. The food is ready when the potatoes are fully cooked. If you like more liquid in the food you just add some more water otherwise you can let it be in the more dry side. (It's up to your personal taste or you can even do the whole dish in the oven instead in the pot on the stove top but do not add so much water. Experiment with this it's very delisious as a side dish or soup)
