Stuffed Peppers

Number of Servings: 4

Ingredients

    Bell peppers
    Ground turkey
    Yellow Rice
    Tomato sauce
    Chicken broth
    Onion
    Parmesan Cheese
    Mozarella Cheese (optional)
    PAM Non-Stick Cooking Spray
    Salt and pepper to taste

Directions

Preheat oven to 350
Prepare rice according to package directions
Cut 2 bell peppers in half lengthwise and remove seeds and membranes
Place open side up in baking dish
Salt and pepper to taste
Add chicken broth to the bottom of the baking dish
Spray skillet with PAM
Chop onions into small pieces
Chop additional bell pepper into small pieces
Saute on medium heat with garlic until golden brown
Add ground turkey and cook thoroughly
Stir in tomato sauce, rice, parmesan cheese
Salt and pepper to taste
Fill halved peppers with turkey mixture
Top with mozarella cheese
Cover with foil and bake for 35 minutes
Remove foil for the last 10 minutes
