Turkey Rice Soup

Introduction

Delicious soup made with leftover turkey, brown rice and vegetables Delicious soup made with leftover turkey, brown rice and vegetables
Number of Servings: 10

Ingredients

    2 Tblsp. Olive Oil
    1 Large Onion
    3 Carrots
    3 Celery Stalks
    1 Cup Brown Rice
    2 Cups Chopped LeftoverTurkey or Chicken
    1 Tblsp. Rosemary
    1 Bay Leaf
    1 Tsp. Thyme
    12 Cups Low Sodium Chicken Broth

Directions

Saute onions, carrots and celery in olive oil for 5 - 10 min. Add rice and saute 2-3 minutes longer. Add chicken stock and spices and let simmer for approx. 1.5 hours. If soup gets too thick add 1-2 cups water to thin out. Add turkey or chicken and allow to heat through.
Serve hot!
