Chicken and Mushroom Saute

Ingredients

    2 cups fresh mushrooms, sliced
    16 oz boneless, skinless chicken breasts
    salt and pepper to taste
    1 TBS olive oil
    1 TBS green onion
    1 lb tomatoes, peeled and chopped (drained if canned)

Directions

Season chicken with salt and pepper. Heat olive oil in large skillet. Add chicken breast and brown on both sides. Remove and set aside. Add onions and cook on high heat 1-2 minutes or until tender. Add mushrooms. Stir rapidly, still on high for 2 minutes. Add tomatoes. Place chicken on top and simmer 12-15 minutes. Add water or broth if necessary.
