Chicken Shepherds pie

Introduction

This pie is totally vegetarian. I chose to thinly slice the potatoes and layer them on top instead of mashed potatoes. This pie is totally vegetarian. I chose to thinly slice the potatoes and layer them on top instead of mashed potatoes.

Ingredients

    Morning star chicken strips broken up
    1/2 cup onion
    2/3 cup celery
    2/3 cup of frozen onions and peppers
    2 cloves garlic
    1 cup of shredded carrots
    1 cup frozen corn
    1 cup frozen green beans
    3 small potatoes
    2 tbs soy sauce
    1 vegetable bouillon square
    1 tbs olivio
    3 servings shredded mozzarella cheese
    1 cup water
    2 tbs flour

Directions

Fry onions, garlic, and peppers. Add other veggies and chicken. Cook until tender, stirring often. Par cook the potatoes. Blanch potatoes and cut into thin slices. Add the soy sauce and preferred seasonings to the chicken and veggies. Spray an 8" by 8" baking pan with non-stick spray. Spoon the Chicken and veggies into pan with a slotted spoon so as to leave behind the sauce. Add butter and flour to make a gravy. Add the gravy to the chicken and veggies. layer potato slices over the chicken and veggies. bake at 400 for 20 minutes. Sprinkle mozzarella over pie and put in oven until melted.
