Buckwheat & Blk. Bean Soup

Ingredients

    3/4 - 1 cup chopped onion
    3/4 chopped red bell pepper
    1-3 cloves of garlic, minced
    1/4 cup buckwheat (Kasha)
    1 tsp. chili powder
    2 cups low-sodium vegetable broth
    1 1/2 cups cooked (or canned) black beans
    1 cup grated carrot
    1 cup corn kernals
    1 bay leaf
    Optional: 1/4 cup chopped Cilantro, 2TB lime juice.

Tips

I used a non-stick pan to saute onions & peppers, so no oil was used.


Directions

Saute onions + peppers. Add garlic, buckwheat + chili and saute 3 mins. longer.
Stir in 2 cups of broth made w the bouillon cubes and the rest of the ingredients.
Cover, bring to a boil, then simmer 20 mins. to cook the buckwheat.
