Introduction

This is an excellent soup if you're hungry for something thick and creamy - you can adjust how much half and half you add and how much you mash the cauliflower for the texture you desire. Number of Servings: 1

Ingredients

    One head cauliflower
    Fat free chicken broth
    Fat free half and half
    Parmesan cheese
    Garlic
    Onions
    Seasoning salt
    Pepper

Tips

If you have fresh parsley and carrots, definitely add them in for more flavor.


Directions

Cut the cauliflower into big chunks. Put in large pot with chicken broth. Cover and cook until cauliflower is tender. Use a potato masher to mash, keeping some texture. Add the half and half and parmesan. Stir well over low heat. Add garlic, onion, seasoning salt, and pepper to taste.

Serving Size: makes 4 one cup servings
