Chicken Tomato Basil Soup

Introduction

Yummy, very easy chicken tomato soup, you can mix in your favorite veggies. Yummy, very easy chicken tomato soup, you can mix in your favorite veggies.

Ingredients

    1 28oz can crushed tomatoes with basil
    1 10oz can chunk chicken breast, shredded with fork
    1 15oz can cannellini/white beans, drained & rinsed
    1 small onion chopped
    1 medium zuchinni thinly sliced
    2 tsp chopped garlic
    1.5 Tbsp chopped Basil
    .5 Tbsp chopped Parsley
    .5 cup milk (I used whole as that's what I had)
    2.5 cups water
    2 large chicken boullion cubes

Tips

You can use any type of beans or vegetables that you enjoy. It really adds some good fiber to your diet.


Directions

Pour tomatoes and water from chicken in soup pot, shred the chicken with a fork and dump it in. Drain and rinse the cannellini beans and add to pot. Chop onion and thinly slice the zucchini and add to pot. Add chopped garlic, spices, and boullion. I pour the milk into the tomato can to get more out and then pour into pot. Then I fill up with water, almost full to rinse the can into the pot and that's how I measure the water.
Cover and bring to boil. Cook over medium-low heat until vegetables are done, about 15 minutes of low boiling.

Serving Size: makes approx 6 1.5 cup servings
